Herbed Basmati Rice


Ingredients

  • 1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
  • 1 3/4 cups water
  • 3/4 teaspoon kosher salt
  • 1 tablespoon unsalted butter
  • 2 tablespoons minced fresh curly parsley leaves
  • 1 tablespoon minced fresh dill leaves
  • 1 tablespoon minced fresh scallions, white and green parts
  • Pinch freshly ground black pepper

Directions

Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

Producing the perfect cup of green tea


Producing the perfect cup of green tea is a tricky process. If not handled properly, those same Polyphemus that provide health benefits can ruin the flavor, making the tea taste "grassy." It's particularly important not to over brew green tea. While it's best to follow the manufacturer's instructions for each variety of green tea, here are some general instructions:
  • Use one tea bag, or 2 - 4 grams of tea*, per cup.
  • Fill a kettle with cold water and bring to a boil.
  • After unplugging the kettle, allow it to stand for up to 3 minutes.
  • Pour the heated water over the tea bag or tea, and allow it to steep for up to 3 minutes. If using a tea bag, remove the bag.
  • Allow the tea to cool for three more minutes.

Ingredients

  • 1  pound  orecchiette
  • 1  tablespoon  olive oil
  • 1  pound  sweet Italian sausage, casings removed
  • 2  cloves  garlic, finely chopped
  • 2 1/2  cups  low-sodium chicken broth
  • 1/8  teaspoon  crushed red pepper
  • 1  bunch  broccoli rabe
  • 4  tablespoons  butter, cut into pieces
  • 1  cup  grated Parmesan (4 ounces)
  • Kosher salt and black pepper

Directions

  1. Cook the pasta according to the package directions. Drain and return it to the pot.
  2. Meanwhile, heat the oil in a large saucepan over medium heat. Add the sausage and cook, breaking it up with a spoon, until it’s no longer pink, 5 to 6 minutes.
  3. Stir in the garlic and cook 1 minute.
  4. Add the broth and red pepper and bring to a boil. Add the broccoli rabe and simmer, covered, until tender, 3 to 4 minutes.
  5. Stir in the butter and Parmesan and cook, uncovered, until the sauce thickens slightly, 1 to 2 minutes.
  6. Toss the pasta with the sausage mixture and ¼ teaspoon each salt and pepper.

  • Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tablespoon ground coriander
  • 2 teaspoons ground cumin
  • 350g lamb mince
  • 2 tablespoons pine nuts
  • 1 loaf Turkish bread
  • 2 tablespoons tomato paste
  • 150g feta cheese, crumbled
  • 1 large tomato, quartered, seeds removed, diced
  • 1/4 cup fresh flat-leaf parsley leaves, chopped                                                                                                   
    • Method

  • Step 1
    Preheat oven to 200°C. Line a baking tray with baking paper.
  • Step 2
    Heat oil in a large, heavy-based frying pan over medium heat. Add onion and garlic. Cook for 3 minutes or until soft. Add coriander, cumin and mince. Increase heat to high. Cook, stirring with a wooden spoon, for 5 minutes or until browned. Add nuts, and salt and pepper. Cook a further 2 minutes, stirring. Cool.
  • Step 3
    Place bread onto baking tray. Spread with tomato paste. Sprinkle with half the feta. Spoon over mince. Sprinkle with remaining feta. Bake for 15 minutes or until warmed through. Top with tomato and parsley.

Each year coffee is harvested during the dry season when the coffee cherries are bright red, glossy, and firm.
Ripe cherries are either harvested by hand, stripped from the tree with both unripe and overripe beans, or all the coffee beans are collected using a harvesting machine.  These processes are called selective picking, stripping, and mechanical harvesting, respectively. To maximize the amount of ripe 
coffee harvested, it is necessary to selectively pick the ripe coffee beans from the tree by hand and leave behind unripe, green beans to be harvested at a later time.
